Being a Gujarati without Dhokla or Khaman our days not start. Sometimes it’s hard to prepare Dhokla batter when you are busy because it takes 8 to 10 hours to get fermented. Rava Dhokla are steamed savory cakes made with semolina and topped with a tempering of curry leaves, mustard seeds, cilantro! This instant version of Rava Dhokla results in perfectly soft and fluffy dhokla which is great for breakfast or snack!

What is Sooji Dhokla?

Dhokla, a popular Gujrati snack, is steamed savory cakes which can be made in a variety of ways. They are soft and fluffy and are a perfect healthy breakfast or snack to enjoy with green cilantro Chutney.

Sooji Dhokla are simple and savory flavored by ginger chili paste salt and pinch of sugar. Sugar i am adding here to give these sooji dhokla a good instant fermentation. It helps sooji dhokla to turn out soft. Many people like garlic too.


Ingredients:

  • Semolina (Sooji): For this instant Sooji Dhokla, I have used fine sooji. You can use coarse sooji too. If you don’t have fine sooji, you can grind this coarse sooji.
  • Yogurt: For instant Dhokla yogurt is a key ingredient.
  • Spices: We are not using that much spices here. We are using only ginger chili paste and salt.
  • Sugar: I am using here pinch of sugar which can help ferment instant dhokla.
  • Tempering: Mustard seeds, cumin seeds, oil, sesame seeds, curry leaves and chopped chili can be used in tempering.
  • Cilantro: Cilantro is using for garnish.
  • Fruit Salt: Fruit salt or baking soda is used which gives instant fermentation to this instant Dhokla.

How to make Rava Dhokla?

Let’s start with gathering the ingredients. Most of the ingredients are commonly used and easily available in your pantry. One special ingredient is Fruit salt or ENO which you can find at Indian grocery stores. Some people have successfully used baking soda in place of Eno in this recipe. I have seen the best results with Eno fruit salt for dhokla.

Prepare Dhokla Batter and Steam

  • Take 2 cups sooji in mixing bowl. Add 1/2 cup of semolina or Sooji. Add ginger chili paste as per taste. Add 1 tbsp of salt and 11/2 cup of water.
  • Mix all the ingredients. I am adding here pinch of sugar and 1 tbsp of oil. Mix all these ingredients well and cover it and let is rest for 15 minutes.
  • While the batter is resting, lets prepare steamer for steaming Dhokla. I have my dhokla steamer but if you don’t have, you can use pressure cooker as well. Add 2 cups of water in steamer and let it boil. Grease oil in dhokla plate and keep it aside.
  • After 15 minutes, open the lid. Check the batter consistency. If Sooji absorbed more water, add little bit water and make medium thick batter. Add eno into this batter and stir immediately.
  • Pour the batter immediately into dhokla plate. Cover the steamer and let it steam for 15 minutes.

Steaming Dhokla:

  • While the Dhokla is steaming, meanwhile prepare the tempering for this Dhokla.
  • Take oil in small pan, add cumin seeds, mustard seeds, sesame seeds and cut green chilies. Add asafetida into this and curry leaves.
  • once the dhokla steamed, let it cool down for little bit and cut into shapes.
  • Add chopped cilantro and pour prepared tadka.

Serving Suggestion:

  • Serve this Dhokla with peanut chutney.
  • You can serve this dhokla with kadak masala chai and garlic chutney too.
