Paneer pasanda is a very popular North Indian Dish. It comes with so many flavors. Soft paneer sandwiches are filled with nut and spice mixture, later shallow fried until golden brown and crispy and served with a luxurious gravy. Paneer Pasanda is best to serve with jeera rice and butter naan or any Kulcha Naan.

Paneer Pasanda is not only a yellow gravy curry but it’s an authentic and rich Paneer Dish.

About Paneer Pasanda

Paneer pasanda is a rich and delicious dish of shallow fried stuffed paneer sandwiches in a smooth, creamy onion-tomato based gravy.

But while paneer pasanda recipe is not for everyday cooking, it is a wonderful dish to serve for special occasions. It doesn’t hurt that making this dish with friends or family is both fun AND greatly reduces the amount of time it takes to make.

You can make this creamy and rich Paneer dish on special occasion like Diwali or any Party. This is the dish which you can not make in everyday cooking. This Dish is rich because the sandwich of paneer is filled with nut and spice.

If you’re craving the flavors of this stuffed paneer delicacy but don’t have the time or patience to make it, you can simply fry the paneer without stuffing it first.

How To make Paneer Pasanda?

Making restaurant style Paneer Pasanda is not easy but it’s not hard too. First we are going to see the ingredients for gravy.

Ingredients for Onion-Tomato and Cashew gravy:

  • 1 small medium onion
  • 2 large tomatoes
  • 1/2 cup cashews
  • dry whole spices like 1 bay leaf, 2 small cardamom, 1 black cardamom, 2 clove and 4-5 black pepper
  • Dry red chili
  • ginger, garlic and green chili as per taste
  • salt to taste
  • oil
  • cumin seeds
  • water
  1. In a large pan add some oil and let the oil heat. Once the oil heat, add cumin seeds. Add asafetida and all whole dry spices.
  2. Add chopped onions, garlic, ginger and green chili or dry red chili. Sauté this until onions and garlic leave their raw taste. Add Cashew into this.
  3. Add Chopped tomatoes and add water. cover it and cook it tomatoes get soften and cooked completely.
  4. Once everything cook well, turn off the flame and let it cool down. Once it cool down, take out bay leaf and black cardamom and grind this until you get the smooth texture.

How to make Paneer sandwich stuffing?

  • 1/2 cup crumbled paneer
  • black pepper powder
  • chopped nuts like pistachio, almonds and cashews.
  • sugar
  • cardamom powder
  • you can add raisins too.

Mix all these ingredients and keep this aside.

Tip: You can add choice of your nuts to make this dish rich. If you like spicy, you can use chopped green chili.

Assemble and cut the Paneer:

You can cut the paneer in triangle shape or in rectangle or square shape. Cut the paneer from the middle and do not cut too much or the paneer will be broken. Fill the stuffing into paneer.

In a pan add some butter or oil, sauté the stuffed paneer until they turn golden brown. Once they are done, take them out and keep it aside.

Make Paneer Pasanda Gravy

Take a pan and add some oil or butter. Once the butter or oil heat, add some cumin seeds, red chili powder, turmeric and cumin coriander powder. Cook this spices for few seconds.

Add the prepare gravy into this. Add salt to taste, pinch of sugar, garam masala and kasoori methi. Cook the gravy for 2-3 minutes. Add fresh cream into this and cook for another few minutes. Once this gravy is cooked completely, turn off the flame.

Transfer the gravy into serving bowl and topped the prepared stuffed paneer sandwich on to gravy. Garnish with cilantro and cream.

Serve this with Naan or fluffy Basmati Rice.

FAQs

Is it possible to prepare fried paneer sandwiches in advance and freeze them 2 to 3 days in advance to shorten the cooking time later?

Unfortunately, I don’t advise freezing the paneer sandwiches for this dish as the cornstarch coating will become dense and chewy. That said, you can make some headway on your preparations.

You can either:
– make both the onion paste and tomato-cashew paste and freeze them, or
– make the gravy and freeze it. Just don’t add dry fenugreek leaves, garam masala and cream. On the day of cooking, heat the gravy in a pan. If necessary, feel free to add bit of water. Allow it to come to a gentle simmer, then add dry fenugreek leaves, garam masala and cream.
