There are two ways you can make this classic bombay sandwiches. You can either make it by grilling or you can just make it without grilling. It is good both ways and as summer is here perfect for picnics and snacking too.

Bombay Grilled Sandwich

Ingredients

For Green Chutney:

  • 1 cup fresh coriander leaves
  • ½ cup fresh mint leaves
  • 2 green chilies
  • 1-inch ginger piece
  • 1 tablespoon lemon juice
  • 2 tablespoons roasted peanuts (optional)
  • Salt to taste
  • 2–3 ice cubes
  • 2 tablespoon roasted bengal gram
  • 1 tbsp sev or ganthiya
  • 1 tsp black salt
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 1 tsp sugar
  • 1tsp chaat masala

Sandwich Ingredients:

  • 8 slices white bread or sourdough bread i like butter bread
  • 3 tablespoons softened butter
  • 1 medium potato, boiled and sliced
  • 1 medium cucumber, thinly sliced
  • 1 medium tomato, thinly sliced
  • 1 small onion, thinly sliced (Optional)
  • 1 small beetroot, boiled and thinly sliced (optional)
  • 1 small tomatoes thinly sliced
  • 1 green pepper thinly sliced
  • 1 teaspoon chaat masala or sandwich

For Serving

  • Tomato ketchup i like the sweet and spicy
  • Extra green chutney
  • Potato chips (optional)

How to make Bombay Sandwich recipe step by step?

Prep

1. Boil 2 potatoes.

2. In the meantime, make the Sandwich Chutney or Ultimate Green Chutney

3. Peel the potatoes. Thinly slice the potatoes, cucumbers, beetroot,tomatoes and green pepper

1. Take 2 slices of sourdough bread (white bread works too). Spread a generous amount of butter on each slice of bread.

Assemble

2. Top with a layer of chutney.

3. Top one slice of bread with potatoes followed by chat masala.

4. Now top with tomatoes.

5. A generous amount of grated cheese and chat masala.

6. Add sliced cucumbers.

7. Top with beetroot and green pepper and more chat masala

8. add grated cheese and close the sandwich

Grill

1. Heat up a skillet or Panini maker for 5 minutes on low heat.

2. Once hot place the sandwich on the skillet. Spread butter on top or spray a little avocado oil. Cook for 5 minutes on one side.

3. Flip. Spread butter on top or spray a little avocado oil on this side. Cook on the other side for 5 minutes.

4. Flip again. Cook for 3 minutes.

5. Slice the sandwich in peices.

Tips on making Bombay Grilled Sandwich:

  • Make sure you boil the potatoes. You can microwave the potatoes, but boiling them tastes better.
  • Use thinly sliced veggies – boiled potatoes, tomatoes, cucumbers, and beetroot and onion.
  • You can use either chat masala or sandwich masala in this recipe.
  • You do need a generous amount of butter when making a Bombay Sandwich.
  • Be sure to use either sourdough bread or a classic white sandwich bread for this recipe.
  • Grill each side of the sandwich for 5 minutes on low heat.
  • Cut the sandwich into fours. Serve with ketchup or red chili sauce.

1. Can I make this recipe vegan and gluten-free?

YES! 

for vegan: Replace the butter and cheese with vegan butter and vegan cheese. Alternatively, you may skip the cheese completely and use oil in place of butter.

for gluten-free: Use gluten-free bread instead of regular sourdough bread. 

2. Grilled Bombay Sandwich vs. No Grill

I like to grill my Bombay Sandwich, however you have the option to not grill the sandwich. If you choose not to grill it, for the best results make sure you use soft white bread instead of sourdough

3. Do I need to use Sandwich Masala for this sandwich?

Instead of Sandwich Masala, I just use Chat Masala which is quite similar. You can certainly buy Sandwich Masala from the Desi Store – I’ve seen it numerous times.

4. What other breads can I use to make this Bombay Sandwich recipe?

To make this Bombay Sandwich recipe or Mumbai Sandwich recipe, I personally love using sourdough bread for sandwiches, not only does it taste great and grills up beautifully, but it also has 8 grams of protein per slice.

You can also use white bread, whole wheat bread, multigrain bread, hamburger buns, or your favorite gluten-free bread to make these delicious vegetarian sandwiches.

  • tep 1: Prepare the Green Chutney
  • Add coriander, mint, green chilies, ginger, lemon juice, peanuts, and salt to a blender.
  • Blend into a smooth paste using a little water.
  • Taste and adjust seasoning if needed.
  • Step 2: Prepare the Bread
  • Spread butter evenly on one side of each bread slice.
  • Spread a generous layer of green chutney over the butter.
  • Step 3: Assemble the Sandwich
  • apply soften butter to one slice of bread and topped with green chutney.
  • Layer sliced potatoes on one bread slice and sprinkle chaat masala or sandwich masala.
  • Add cucumber, tomato, onion, green pepper and beetroot slices.
  • Sprinkle chaat masala, salt, and black pepper over the vegetables.
  • Cover with another chutney-coated bread slice.
  • Step 4: Toast the Sandwich
  • Heat a sandwich toaster, grill pan, or skillet.
  • Lightly butter the outer sides of the sandwich.
  • Toast until golden brown and crisp on both sides.
  • Step 5: Serve
  • Cut the sandwich diagonally into halves or quarters. Serve hot with green chutney, ketchup, and crispy potato chips.
