I am bringing you the best Mexican Rice recipe. After trying out this recipe, I will assure you will make again and again. If you are fan of one pot meal, then this recipe is definitely for you. This protein packed Black Bean Mexican rice is full rich of protein, fiber and other nutrition. For more protein you can add your choice of source of protein.

Mexican Rice

We love a one-pot meal and this one delivers both ease and flavor. This colorful vegetarian meal gets plenty of protein from black beans, and a big boost of flavor from the chili powder and cumin. In fact, you should be able to find most of the ingredients in your pantry. Think: long-grain rice, diced tomatoes, frozen corn, onions, bell peppers and a few spices. Everything is cooked in one heavy-bottomed pot such as a Dutch oven, but feel free to use a skillet, so long as it has a lid.

Mexican Rice is one -pot meal and this one delivers both ease and flavors in minimum time. This colorful and flavorful vegetarian meal has plenty of protein from black bean. If you don’t have black bean, you can use pinto beans or kidney beans.

Adding varieties vegetables or seasonal vegetables give the phenomenal taste and flavor to this one pot Mexican rice. I would suggest the fresh corn cobs rather than the frozen one and you will thank me later. To make this One pot Mexican rice we need minimal seasoning. My secret ingredient to make this i used Homemade Enchilada Sauce instead of tomatoes or any Taco sauce.

You can use any rice of your choices. Brown rice works well as well as long grain rice. Once you will prepare all ingredients, this dish comes together in less than 15 minutes.


Ingredients

  • Vegetables: You can use any varieties of veggies or seasonal vegetables. I used zucchini, colored peppers, onion and scallions.
  • Black Bean: This dish is protein packed one pot dish in which you will get plenty of protein from black bean. If you don’t have black beans, you can use pinto or kidney beans.
  • Seasoning: This dish requires minimum seasoning. Seasoning like salt, taco seasoning, red chili flakes used for this recipe.
  • Rice: You can use choice of your rice like brown rice or any long grain rice. You can cook rice ahead of time or you can use leftover rice too.
  • Enchilada Sauce: Ok, this is my secret ingredients for my this recipe. I make homemade enchilada sauce. The flavors in that sauce is so good which gives amazing taste to this rice. If you don’t have simply use chopped tomatoes and taco sauce whatever works well for you.
  • Oil: You can use any vegetable oil, olive oil or Avocado oil.
  • Garlic: Mexican dishes or any dishes don’t taste good without garlic. Minced or grated garlic works well for this.
  • Jalapeno: If you like spicy flavor, use chopped jalapeno while sauté veggies.
  • Corn: I personally love love corn in any Mexican dishes. Corn gives beautiful flavor and taste. You can use frozen but i would suggest to use fresh corn from the cob.

How to make Mexican Rice?

  • To make this one pot Veggie Black Bean Mexican Rice, you just need to prepare few ingredients. If you have leftover rice, that would work perfectly. If you don’t have, you can cook it ahead of time and keep it aside.
  • Prepare the vegetables like chopped onions, yellow pepper, green pepper, zucchini. Prep minced garlic and chopped jalapeno.
  • In a Dutch oven or any pan, add some oil. Once the oil started heating, add minced garlic and jalapeno into this. Let it saute for few second and add chopped onions.
  • Saute onions until it turn brown or leave their raw taste. Add zucchini, colored peppers into this. Cook the veggies for few minutes by adding salt. After few minutes, add black beans (you can use canned black beans or you can simply cook at home too) and corn into this.
  • Add taco seasoning, enchilada sauce (if you don’t have it, use chopped tomatoes or taco sauce ), paprika or red chili flakes. Cook all these ingredients for few minutes.
  • Add cooked rice into this. Give a nice mix and add salt to taste. ( make sure you have added salt before too when you cooked veggies) Turn the heat off and garnish with scallions.

Serving Suggestions and Store

  • Mexican Rice generally can be served with any Mexican dishes like Enchiladas, wet burritos or chimichangas.
  • This one pot Black bean Mexican Rice can be eaten with guacamole, taco salad and sour cream too.
  • You can store this rice for few days in refrigerate.

Tips Tops:

  • To Make this quickest easiest rice cook rice ahead of time and refrigerate it. This will give beautiful texture.
  • If you are adding chopped tomatoes then avoid enchilada sauce.
  • You any veggies you like to make this dish flavorful.

  • 1 cup cooked rice

  • 1/4 cup green pepper

  • 1/4 cup yellow pepper

  • 2 tbsp chopped onions

  • 1 tbsp minced garlic

  • 1 tsp chopped jalapeno

  • 3 tbsp enchilada sauce

  • 1 tbsp salt

  • 1/2 cup black bean

  • 1/2 cup corn

  • 2 tbsp scallions

  • 1 tbsp taco seasoning

  • 1 tbsp oil

Directions

  • In a dutch oven or Pan add some oil. Once the oil gets hot, add minced garlic and chopped jalapeno. Saute these for few seconds.
  • Add chopped onion into this and let it cook for few minutes or they turn brown or leave their raw smell.
  • Add Zucchini, colored peppers into this by adding little bit of salt. Cook these for little bit. Do not over cook this.
  • Add 1/2 cup black beans and 1/2 cup corn into this. Add seasoning like salt to taste, red chili flakes or paprika, enchilada sauce and taco seasoning. Mix this well.
  • Add Cooked rice into this and garnish with scallions.
  • Serve with any Mexican dish.
