Paneer Fajita Veggie Quesadilla

Today I have for you a Paneer fajita veggie quesadilla. They are so yummy I could probably eat them every day!

I’ve taken regular quesadillas which we all know and love – tortillas and cheese – and jazzed them up with Paneer fajita vegetables.

I love making a huge pan of fajita veggies and using them throughout the week.

They’re so good with any types of tacos, as a topping for fajitas Rice Burrito bowls. I added Paneer here just for my fusion Taste. You can always add black beans or refried beans for protein.

Plus, they couldn’t be easier to make. Simply sauté sliced vegetables until they’re sizzling and a bit charred.

All the vegetables will be transformed into even deeper flavors. Season with salt, pepper and garlic to taste and you’re good to go!

There are so many ways you can use these sautéed vegetables, but one of my favorites is definitely in a Fajitas Veggie Quesadilla or Paneer Fajitas Quesadillas. They’re quick easy to make and so tasty.

Which Tortilla Is good to use ?

For quesadillas you can use the small fajita flour tortillas or corn tortillas too. I like to use @missionfood tortillas. You can always choose what is best for you.

For cheese you can use Shredded Monterey Jack or Cheddar too. I like to use @sargentocheese mexican cheese.

Serving

you can serve this quesadillas with any salsa. If mango season is here you can serve this with mango salsa or any regular salsa. You can also serve this with fresh Guacamole and sour cream. This is perfect for any summer picnic party or get-together.

Ingredients

  • oil

  • minced garlic

  • onions

  • colored peppers

  • paneer

  • tortilla

  • taco seasoning

  • red chili powder

  • fajita seasoning

  • sweet corn

  • salt to taste

  • cilantro

  • lemon juice

  • mixed herbs

Directions

  • preapare all veggies cut in slices.
  • In a pan add 2 tsp of oil.
  • Add finely chopped garlic. I used 3 big garlic cloves.
  • Saute till they become slightly golden brown.
  • Add in ¾ chopped paneer. I brought the store bought paneer cubes to room temperature and chopped them into cubes. You can make them as bhurji as well.
  • To this add ¼ cup frozen sweet corn. You can use boiled sweet corn as well.
  • Now add chopped capsicum. You can use colored capsicum as well.
  • Combine well.
  • Add in the spices to taste. I used mixed herbs and chili flakes. You can use Indian spices as well. Add salt to taste.
  • Mix well and cook for 2-3 minutes.
  • Filling is ready for Quesadilla
  • Place one tortilla in a tawa. Cook on both sides for 10 seconds.
  • Place the filling on one side. Usually, the more the more the filling, it will be yummy.
  • Add grated cheese on the top.
  • Fold it.
  • Cook on both sides and flip gently.
  • Take out and cut them into 2 pieces using a pizza cutter.
  • Serve hot or you can pack this for kids lunch box or snacks box as well.
  • The filling came for 3 quesadillas. You can use the same filling for making sandwich.
